Neither a picture nor a description can adequately express how delicious this was. Maggie posted about this on her blog "Cheap & Cheerful". Originally from epicurious.com, this is a wonderful blend that is much greater than the sum of it’s parts. It is simply shrimp, scallions and corn cut off the cob sautéed in butter and topped with fresh basil. That’s it – 5 ingredients. It couldn’t be more fresh tasting – summer on a plate.
All you have to do is WAIT for good sweet corn. I didn't even use great shrimp - just a bag of frozen ones from the supermarket. You cut the corn off the cob (scrape out the 'milk', too), plop 2 tablespoons of butter in a big pan, dump in a half pound of shrimp and the kernels from 2 ears of corn and let it cook, tossing to keep everything moving. Basically, it's a stir-fry. When it is done, you sprinkle with 1/4 cup basil and 4 chopped scallions and dig in (I sautéed the scallions with the corn and shrimp because I find the flavor of raw onions unpleasant). I told Maggie that I could eat this once a week as long as the sweet corn is running!
